Jan JureckaSundara’s head minister has certainly shaken things up since his arrival. However, before releasing anything major, he would take the time to properly explore the island. The result is a completely new cocktail menu inspired by the “personalities” of Bali, which offers a wide range of creative concoctions in a class to reflect the qualities and results of the various regions.
This fun and interactive menu features six categories, listed in a matrix of styles, including: ‘Bold & Adventurous’, ‘Botanical & Fruity’, ‘Natural & Nourishing’ and ‘Relaxed & Care-free’. For example, the “Ubud Wellness Guru” features earthy, fresh and fragrant concoctions inspired by the health-based goodness of the area. Sustainable Probiotic Mojito with fresh thyme and fermented Bali tepache is such a drink under this personality. Under the ‘Jimbaran Sustainability Warrior’, drinks reflect the venue’s own environmental efforts, such as Mangrove Recall, a fruity, floral blend that not only features mangrove flowers, but funds the planting of new mangroves in each row. The menu is truly original, and drinkers have fun choosing between categories from ‘Canggu Influencer’ to ‘Singaraja Connoisseur’. Although it is complex and expressive, every drink is well balanced and tastes great.
On the menu is an overview of the service sustainability. Sundara is the first force in Bali to use the ecoSPIRITS technology, which eliminates the waste of premium spirits; They follow the bowl by bowl philosophy and in the gym as much as possible. As an avid diver, rock climber, vegan and farmer, sustainability is something the Slovakian entrepreneur has in the use of clothing, evident in his creations.
