The art of distillation has been in Bali for centuries. The local Balinese spirit is known as arak, which has long been integral to the island’s traditions and daily life, used in ceremonies and celebrations. Arak is made by distilling the sweet juice of the palm ddy y which is beaten and collected deep among the sago. It is traditionally distilled in ceramic pots and bamboo shoots.
In delivering his creation, Putu has preserved this local tradition of distillation while elevating the process through modern tools and equipment. In an effort to sustain Alila Villas Uluwatu’s zero-waste effort, Alila Botanicals is made with local ingredients and organic produce sourced from restaurants and bars.
The production of Alila Botanicals involves a three-week process on-site at the resort, starting with the fermentation of the remaining fruit, followed by the first distillation. The liquor is then infused with 11 different botanicals including frangipani, chamomile, sencha, aenean, red pepper, lavender, bergamot, liquorice, angelica root, caltha and absinthe, before undergoing a second distillation process. The last step is the final process of distillation and filtration to achieve the best and purest spirit, which combines a very delicate and refined taste with a complex flavor profile.
Boasting a dry, smooth and aromatic spirit, Alila Botanicals features light and sweet hints of floral notes that are perfect when poured over ice and topped with tonic water for an invigorating sip any time, especially on hot, sunny days.
